He came from Riez, near Cully, where the Forestey family is frequently mentioned in the records of the notaries. The spelling usually encountered in modern records is Forestier. He and his two wives are mentioned many times in the 16th Century terriers of Aubonne and in the records of the notary Claude Mayor (ACV DB 26). Among other sources, the undated terrier ACV Fh 34 notes that he came from "Riex sus Culli" and had acquired citizenship at Aubonne (fol. 11). François and his brother Claude made a "partage" or division of the estate inherited from their brother Noël 12 feb 1588 (Eg. Jaques Gerbex, notary at Cully, not yet examined, ACV Di 62/2, fol. 104v).

He sold property to his cousin Gamaliel Robert 25 apr 1562, according to a "reconnaissance" made by Gamaliel Robert on 08 feb 1612 (ACV Fh 173 fol. 561 ff; the date 1562 might be the date of a previous reconnaissance, rather than the date of the sale to Gamaliel Robert?). His children made a reconnaissance on 25 jan 1615, represented by their cousin Jonas Cuynssin and George Buttaz of Aubonne (Fh 174, fol. 239)— this document specifies that the grandfather of these minor children was François Forestey. Additional documents relating to Gamaliel Forestey are in the Archives Cantonales Vaudoises (ACV C XV 17/46 and 17/22).
We are indebted to Charles Valier for photographs of a "Livre pour les Arquebouziers d'Aubonne, commencé en l'an 1604" (Archives communales d'Aubonne PA 5.5?), in which we find the following entry: "Le Dimanche xxe de May an predict honnorable Gamaliel Forestey ayant mis bas le Papegay a esté Roy pour ladicte année." The previous "king" was Discret Jean Billiard. The "papegai" was, and in some places still is, a wooden figure of a bird that is mounted in some high place, serving as the target for an annual shooting contest. The winner is dubbed the "King of the Papagay" for the succeeding year, and, under the ancien régime, had various privileges, including in at least one case we have seen the right to sell property without paying the "lods", a sort of real estate transfer tax. A "livre de raison" from the Clavel family at the Archives Cantonales Vaudoises contains a record of the birth of Gasparde, daughter of Claude Sordet and Esther Tillier, 14 apr 1580, and mentions that the godparents for the baptism were Noël Forestey and his wife Gaspardaz de Chimini, with a later notation that the child had married "Valier d'Aubonne".
